Pumpkin Bread: Ingredients: Mix Only: 2 eggs, 2/3 cup oil, 2/3 cup water. Mix + Pumpkin Puree: 2 eggs, 1/3 cup oil, 1/4 cup water, 3/4 cup pumpkin (about 1/2 of 15 oz can). Baking Instructions: Makes one loaf pan (8 inch x 5 inch). Bake at 350 degrees F for 50-60 minutes. Instructions: Preheat oven to 350 degrees F. Line 12 muffin pans with liners or spray loaf pan with oil. Whisk together eggs, oil, water, and pumpkin puree (optional); whisk until fully combined. Add one package of mix and stir until fully incorporated. To Make Pancakes: Whisk together 3/4 cup + 2 tablespoons milk, 1 tablespoon oll and 3 eggs in a large bowl. Add mix and whisk until just combined. Cook in a preheated and greased skillet over medium heat. Flip once and serve once cooked through. Pumpkin Muffins: Ingredients: Mix Only: 2 eggs, 2/3 cup oil, 1/4 cup water. Mix + Pumpkin Puree: 2 eggs, 1/3 cup oil, 1/4 cup water, 3/4 cup pumpkin (about 1/2 of 15 oz can). Makes 12 muffins. Bake at 350 degrees F for 18-22 minutes. Fill each muffin tin 2/3 full with batter or pour batter into greased loaf pan. Bake according to the chart above based on your preferred preparation. For Cookies: Add 8 tablespoons softened (not melted) butter to a bowl and beat until creamy. Add 1 egg and mix until incorporated. Add mix and beat until dough starts to come together. Scoop dough by the tablespoonful and place on a baking sheet 2 inch apart. Bake at 350 degrees F for 9-11 minutes. For high altitude baking, please use the following instructions: Mix Only: Add 1/4 cup flour to the mix and stir until combined. Add 3/4 cup water, 1/2 cup oil, and 3 eggs. Bake according to the above instructions. Mix & Pumpkin Puree: Add 1/4 cup flour to the mix and stir until combined. Add 1/4 cup water, 1/2 cup oil, 3 eggs, and 3/4 cup pumpkin. Bake according to the above instructions. Do not eat raw batter.
