You Will Need: 1 can unsweetened coconut milk; 1/2 tsp. cornstarch; 1 cup frozen green beans; 1/2 cup frozen pea and carrot blend; 1 can chickpeas, drained. Directions: 1. In a medium saucepan, whisk together coconut milk, packet contents and cornstarch. 2. Heat to a simmer on medium-low heat. 3. Add vegetables and chickpeas. 4. Return to simmer for about 5 minutes, until vegetables are tender. 5. Serve over rice.
