Basic Cooking Instructions: Bring 1-1/4 cups water or broth and 1/2 tsp salt (optional) to a boil in a medium-size pot. Add 1 cup couscous and 2 Tbsp butter or oil (optional). Stir, cover, remove from heat, and let stand for 5 minutes. Fluff well with a fork and serve. Makes 3 servings. As a Cereal: Add 1 cup couscous to 2 cups hot milk and 2 tablespoons butter cover, let stand for 5 minutes. Serve with toppings such as honey maple syrup, nuts, and fruit. Makes 3 servings. Moroccan Couscous: 3 tbsp olive oil. 3 cloves garlic, minced. 1/2 cup chopped yellow onion. 1 tbsp tomato paste. 1/4 tsp smoked paprika. 1/2 tsp ground cumin. 1/2 tsp ground ginger. 1/4 tsp ground coriander. 1/4 tsp ground cardamom. 1/4 tsp ground turmeric. 1/4 tsp ground cinnamon. 1/2 cup raisins. 1-14/cups low-sodium chicken or vegetable broth. 1 cup bob's red mill golden couscous. 2 tsp sea salt. 1/4 cup slivered almonds. 1 tbsp minced fresh parsley. Heat olive oil in a pot over medium heat. Saute garlic and onion until golden, about 4 minutes. Add tomato paste and spices. Saute until tomato caramelizes, about 3 minutes. Add raisins and broth. Bring to a boil. Add couscous and stir. Remove from heat, cover and let stand for 5 minutes. Fluff with a fork. Add salt, slivered almonds and minced parsley, and stir to combine. Makes 4 servings. Store in a cool, dry place. Tear here to open.
