Classic 3-Minute Spinach! 1 bag Cooking with Spinach Classic; 1 tbsp olive oil (or our favorite cooking oil); salt and pepper. Heat oil in large skillet over high heat. When hot, add spinach and cover with lid. Stir spinach after 1 minute and replace lid. Cook 2 minutes more until wilted but still bright green. Season with salt and pepper to taste. Serves 2-3 as a side dish. Spice up your spinach by adding 1/2 tsp hot chili flakes and 1 tsp lemon juice after first minute of cooking! Keep refrigerated.
