Mushroom Grilling

A delicious portabella burger is a vegetarian meal even a meat eater will love. Mushrooms are conveniently grillable and add a fresh dimension to your usual outdoor barbecue.  

1) Pick a size

Large portabella mushrooms can hold their own on the grill grate alongside other burgers, ribs and chicken. Portabellas are a great meatless alternative to the burger patty for their meaty, earthy taste and texture. Since mushrooms loose about 50% of their size, smaller mushrooms such as oyster, white or shiitake are perfect for skewering on pre-soaked bamboo or sautéing in foil baskets using 6-12 inches of foil, lifting the edges and placing the crumbled seasoned mushrooms inside.

2) Clean ‘em up

Before they hit the grill, pat them down with a cloth or paper towel and rinse any debris off with cold water then let dry. Trim up the stems, especially for portabella burgers.

3) Add some flavor

Slather them with marinade like barbecue sauce, teriyaki sauce or olive oil, lemon juice and spices overnight or use a glazing brush and add the marinade right on the grill.

4) Hit the flame

Brush grill with olive oil if placing directly on the grill. Depending on size, cook for 10-15 minutes, rotating frequently until mushrooms are light golden brown.

5) Serve and enjoy!

Serve them as a complementary side dish with grilled chicken, place them on top a seared steak or enjoy one right between two buns for a delightful mushroom burger.
