Pan-Seared Halibut Fillets

Prized for its delicate sweet flavor, snow-white color and firm flaky meat, halibut is an excellent source of high-quality protein and minerals. From the chef’s perspective, it’s a very versatile fish with tender white flesh that retains a buttery and moist quality when prepared correctly—such as in this simple pan seared preparation. - 4 halibut fillets (approximately 24 oz)
- Kosher salt, to taste
- Freshly ground black pepper, to taste
- 1 Tbsp olive oil
- 1 lime or lemon, cut into wedges
Season the halibut liberally with salt, and season with pepper. Heat a large skillet over medium high heat and add olive oil. Add the halibut and cook until opaque (3-5 minutes per side). Serve with lime wedges and enjoy.
