Fresh Wild Alaskan True Cod
Fresh fish is always the way to go! I never know which fish I’ll get for dinner until I get to the seafood counter. Today there was Wild Fresh Alaskan True Cod Fillets on sale. Cod is my favorite because of its mild taste. Its firm, flaky white texture is perfect for cooking with a sauce because it doesn’t fall apart. I know I said I’m eating fish at least once a week this year to be healthy, but I already had a recipe in mind and it involved a “little” bit of butter…Piccata Style Fish Fillets with Angel Hair Pasta by Rachael Ray. I subbed in broccoli for wilted spinach. Spinach didn’t sound too appealing at the time. The recipe turned out wonderfully. A 3.5 oz serving of cod only has 105 calories, so I think I had room to add butter. =)
My favorite reason for eating fish is the leftovers I use for fish tacos the next day. My normal routine is to sauté the fish with taco seasoning on it. Make coleslaw with a bag of Fresh Express Slaw Mix and Litehouse cole slaw dressing. Buy Haggen (fresh made in the deli) or Mrs. Renfros Mango Salsa. Layer the fish on a corn tortilla with the coleslaw and salsa on top.
My Picatta leftovers had me worried because taco seasoning would be too much flavor, but I still wanted my fish tacos. They turned out way better than I thought. I just sautéed the fish picatta with some leftover broccoli. Once warmed, I spooned it on corn tortillas with coleslaw and hot sauce. It was an Italian twist on tacos. I recommend this quick dinner. I love creating a new meal with leftovers.
Second week down….now what fish to cook next week….
