Vegan Tomato Soup
(Serves 5 – 6)
- 8 medium tomatoes (chopped)
- 1 medium white onion (chopped)
- 3 garlic cloves (minced)
- 1 cup fresh basil (chopped)
- 1 cup coconut milk
- 2 tsp olive oil
- 2 tsp Spice Hut Garam Masala
- Salt to taste
Heat oil in large pot. Add onions and garlic and sauté until soft and golden. Add chopped tomatoes and cook for 2-3 minutes. Add Spice Hut Garam Masala and salt to taste. Stir in coconut milk and cover for 5-10 minutes. Continue to cook until tomatoes are soft. In a high-speed blender or food processor, blend the mixture until smooth. Return soup back into the pot and cook on low heat for 10 minutes. Garnish with basil and serve warm.
