The Perfect Hardboiled Egg Method
There’s a variety of tried-and-true methods to crack the mystery of the perfect hardboiled egg. Starting with boiling water versus cold water, pressure cooked, oven baked—but our trial and error has revealed a winning method: steamed.
In a saucepan bring 1″ of water to a boil and place a steamer basket containing 6 eggs into the pot. Cover with a tight fitting lid. Allow to steam for 13 minutes. Transfer eggs to an ice bath and chill for 15 minutes.
Once boiled and peeled, slice each egg in half lengthwise and scoop the yolks into a bowl.
Mash them with the recipes below, and spoon or pipe the mixture back into the egg halves.
