Roasted Asparagus with Parmigiano-Reggiano
Extra virgin olive oil
Freshly ground black pepper
Fresh dill for garnish
Preheat oven to 400°. Lay the asparagus side by side in a single layer on a baking sheet. Drizzle with olive oil. Sprinkle with salt and pepper to taste.
Roast for 15 minutes or until tender. Sprinkle with grated or shaved Parmigiano-Reggiano and return to oven for 1 minute. Transfer to serving platter and garnish with fresh dill if desired.
