Magic of Citrus

Fruits of the zesty variety are not just for eating. Keep your whole body healthy and bright during the dreary winter months with the freshest citrus arriving for winter.

For the skin:

Spicy sugar scrub

  • 3/4 cup sugar
  • 2 tsp ground cloves
  • 1 Tbsp fresh rosemary, chopped
  • 2 tsp grated citrus zest (citrus of your choice)

Combine ingredients in a large bowl, making sure that everything is well mixed. Use on damp skin twice a week for smoother skin. Mix can be stored and used for up to six months in cool, dark cupboard.

Citrus Infused Water

  • Fresh citrus of choice
  • Fresh mint
  • Fresh ginger root

Thinly slice citrus, and gently crush mint leaves and ginger. Place into a pitcher or glass and will with water. Refrigerate and allow ingredients to infuse for 2-4 hours. Serve cold.

For the home:

Dried Orange Peel Potpourri

  • 4 cinnamon sticks, crushed
  • 2 Tbsp fresh orange peel
  • 1-1/2 Tbsp whole cloves
  • 1-1/2 Tbsp whole allspice

Grate orange peel with zester or peel small strips with peeler. Slow dry the peel for 3-6 days in a single layer on a cookie sheet (retains more natural oils), or dry in oven at 170° for an hour or until completely dry and brittle. Combine all ingredients into a bowl and enjoy the spicy scents all throughout the winter months.

For the tummy:

Mini Orange Peel Muffins

  • 2 sticks salted butter, softened
  • 1 cup granulated sugar
  • 2 eggs
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 cup buttermilk
  • 2 oranges, zested and juiced
  • 1 cup brown sugar, lightly packed

Preheat oven to 375°. Cream together butter and granulated sugar in a large bowl. Add eggs one at a time and beat well. Mix in flour.

In small bowl, dissolve baking soda in buttermilk and add mixture to the batter along with orange zest. Mix well.

Fill mini muffin tins 2/3 full with batter and bake until lightly browned (about 12-17 minutes).

Combine brown sugar and orange juice and mix well. Drizzle glaze over warm muffins in the tin. Remove muffins while warm.
