Grilled Yams with Cilantro Lime Dressing
- 2 pounds yams
- 3-4 Tbsp olive oil
- Kosher salt
- Fresh cracked pepper
- (or chipotle chili flakes)
- 1/4 cup finely chopped fresh cilantro
- 1 tsp lime zest
- 2 Tbsp fresh lime
- 1/4 cup olive oil
- Pinch of salt and fresh cracked pepper
Prepare your grill for hot, direct heat. While the grill is heating up, peel the yams and slice lengthwise into 1/4 inch-thick pieces. Coat the yam slices with olive oil and lightly sprinkle with sea salt and a dash of fresh cracked pepper. For some smoky heat substitute some chipotle chili flakes for the cracked pepper.
In a small bowl, combine all of the dressing ingredients. Set aside.
Once the grill is hot, lay the yams down onto the grill grates. Turn the heat down to medium and cover the grill. Cook until each side gets some grill marks and starts to become tender, about 6 minutes for each side. If you cut the yams too thick they may not soften on the grill, you can finish them in the microwave before tossing them in
