What is beefalo? Exactly what it sounds like! Ranchers Mark and Linda Merrill of Ellensburg, Washington breed the perfect blend of 3/8 North American Bison and 5/8 beef for an award-winning steak. In fact, it earned them Best Tasting Grass-Fed Steak in America (5 times!).
Their Ellensburg-raised, grass-fed beefalo contains no steroids, no antibiotics and no hormones, plus it has up to four times less fat and six times less cholesterol than beef. At 13mg of cholesterol per 100g, beefalo is even lower in cholesterol than chicken and most fish making it the healthiest beef on earth!
Beefalo is tender and juicy and a sweet, mild flavor. It can be substituted for any beef entrée, but keep in mind that it cooks 30% faster and shrinks 1/3 less than beef.
