Traditional South-of-the-Border Flavor

Our Market Street Catering chef, Bryan Weener, loves discovering new flavors and integrating them into his seasonal catering menu. Here are Bryan’s tips for celebrating Cinco de Mayo with a few Latin cooking tips.

Cinco de Mayo—celebrated on the 5th of May to signify Mexico’s victory over the French in the Battle of Puebla in 1862. It’s a holiday of great pride for Mexicans and Mexican-Americans alike, however often confused with Mexico’s Independence Day which is September 16th.  Another common confusion? The belief that Latin American cooking is all about spiciness. While it’s true that Latin cooking does use a lot of chilies, they’re mild and used more for flavor than spicy heat. While the Mexican food of tacos, burritos and enchiladas is ingrained in American culture, there’s a variety of lesser known south-of-the-border cuisine that we’ve yet to add to our cooking repertoire.

Similar to a hearty stew we’re familiar with on a cold weather evening, posole (or pozole) is a soul-warming soup consisting of hominy (corn), pork or chicken, and chilies. It’s a dish with a rich history of ritual significance that dates back to the 1500s and since corn was known as a sacred plant by the Aztecs, posole was a dish served on special occasions. Today, it’s enjoyed throughout Mexico and our southwestern states for weddings, birthdays or quinceaneras. 

One of my all-time favorite desserts is tres leche cake. A tall sponge cake soaked in three different milks—heavy cream, sweetened condensed milk and whole milk flavored with coffee and cinnamon. The cake is baked then soaked overnight in the milk mixture and served with whipped cream and Mexican chocolate shaved on top.
