Hatch Chiles Have Arrived

The unique soil and growing condition of New Mexico’s Hatch Valley is where the celebrated Hatch Chiles have been nurtured and cultivated for over 130 years. Every summer we channel our inner Southwesterner and bring the spice of New Mexico to the Northwest.

These precious peppers are only here a short time each year. We’ll be roasting them fresh in store all this month so check the roasting schedule to see when our roaster will be rolling into your local store. Roasted chiles freeze well too so if it’s year-round heat you’re looking for be sure pick up enough to satisfy all year.

These peppers pack a punch when it comes to health benefits. One fresh, medium-sized chile pod has as much Vitamin C as six oranges! Plus, hot chile peppers burn calories by triggering a thermodynamic burn in the body, which speeds up metabolism. How’s that for a summer workout?

Our very own Chef James’ crafted some delicious and original recipes to heat up the taste buds, like BBQ Boneless Chicken with Hatch Chile BBQ Sauce, Hatch Chile Grilled Fruit Salsa, or Henning’s Hatch Pepper Cheddar Corn Dip. Find all his Hatch Chile recipes on our blog and let us know what Hatch Chile creation you cook up!

We’re also hosting pepper-roasting events in stores:
